Nasi Goreng: Indonesian Fried Rice

Classic Indonesian fried rice, savory and slightly sweet from kecap manis, stir-fried with garlic, onion, carrot and shredded chicken. Serve with crisp cucumber, fried shallots and an optional fried egg for authentic comfort food any time of day.

Nasi Goreng: Indonesian Fried Rice

Ingredients

  • 300g (10.6 oz) cooked white rice, preferably day-old
  • 30ml (2 tbsp) vegetable oil
  • 6g (2 cloves) garlic, minced
  • 50g (1.8 oz, about 1 small) onion, chopped

Method

  1. 1Prepare ingredients first: break up any clumps in the day-old rice, finely mince garlic, chop the onion, dice the carrot, shred the cooked chicken, and slice the chili if using.
  2. 2Heat 30ml (2 tbsp) vegetable oil in a wok or large frying pan over medium high heat until shimmering.
  3. 3Add the minced garlic and chopped onion, sauté for about 2 minutes until fragrant and the onion is translucent.
