- 500g chicken thighs, boneless and skinless, cut into strips
- 2 tbsp turmeric powder
- 1 tbsp coriander powder

Method
- 1In a mixing bowl, combine turmeric powder, coriander powder, minced garlic, minced shallots, bruised lemongrass, grated galangal, and salt. Add coconut milk and lime juice; mix well to form the marinade.
- 2Marinate the chicken strips in the spice mixture for at least 2 hours, or preferably overnight for deeper flavor penetration.
- 3Thread the marinated chicken pieces onto soaked bamboo skewers, leaving small gaps between each piece.
