Classic Indonesian shaved-ice dessert with creamy coconut milk, cocopandan syrup, sweet ketan hitam, jackfruit, nata de coco, and avocado.

Ingredients
- 200g (7 oz) black glutinous rice (ketan hitam), rinsed
- 900ml (3 3/4 cups) water (for cooking rice)
- 120g (4 1/4 oz) palm sugar (gula merah), chopped
- 240ml (1 cup) water (for palm-sugar syrup)

Method
- 1Cook the ketan hitam: In a medium pot, combine 200g (7 oz) rinsed black glutinous rice with 900ml (3 3/4 cups) water. Bring to a boil, reduce to low, cover, and simmer for 45 minutes, stirring every 5 minutes, until the grains are very tender and the mixture is thick.
- 2Make the palm-sugar syrup: In a small saucepan, simmer 120g (4 1/4 oz) palm sugar with 240ml (1 cup) water for 5 minutes, stirring until fully dissolved. Cool to room temperature.
- 3Sweeten the rice: Stir 150ml (2/3 cup) of the cooled palm-sugar syrup into the cooked rice and simmer uncovered for 5 minutes, stirring constantly, until glossy and thick. Cool for 30 minutes, then refrigerate for 30 minutes.
- 4Make the coconut base: Whisk 400ml (1 2/3 cups) coconut milk with 160ml (2/3 cup) sweetened condensed coconut milk and 1g (1/8 tsp) fine salt until smooth. Refrigerate until cold.
