Classic Bibimbap Bowl

Ingredients
- 200g short-grain rice
- 150g spinach, blanched
- 100g bean sprouts, blanched
- 1 carrot (50g), julienned

Method
- 1Rinse and cook the short-grain rice in a rice cooker or pot using the appropriate amount of water. Keep warm.
- 2Blanch spinach and bean sprouts in boiling water for 1-2 minutes each, then drain and set aside.
- 3Julienne the carrot and zucchini. In a skillet, heat 1/2 tbsp vegetable oil over medium heat. Sauté carrots for 2-3 minutes until tender. Set aside. Repeat separately with zucchini and set aside.
- 4Wipe the skillet and add another 1/2 tbsp vegetable oil. Sauté the sliced shiitake mushrooms for 2-3 minutes until softened. Set aside.
