Ingredients

  • 4 salmon fillets, about 170g (6 oz) each, skin on
  • 480g (2 cups) cooked short grain rice
  • 60g (1/4 cup) white miso paste
  • 45ml (3 tbsp) maple syrup

Method

  1. 1In a small bowl, whisk together the white miso paste, maple syrup, soy sauce, rice vinegar, sesame oil, grated ginger, and minced garlic until smooth and homogeneous.
  2. 2Place the salmon fillets in a shallow dish and pour half of the marinade over them, turning to coat evenly. Cover and refrigerate for 20 to 30 minutes. Reserve the remaining marinade in a covered container in the refrigerator.
  3. 3Preheat the oven to 200°C (400°F). Line a baking sheet with aluminum foil and lightly grease the foil with a neutral oil or nonstick spray.
