Miso Maple Glazed Salmon Bowls

Ingredients
- 4 salmon fillets, about 170g (6 oz) each, skin on
- 480g (2 cups) cooked short grain rice
- 60g (1/4 cup) white miso paste
- 45ml (3 tbsp) maple syrup

Method
- 1In a small bowl, whisk together the white miso paste, maple syrup, soy sauce, rice vinegar, sesame oil, grated ginger, and minced garlic until smooth and homogeneous.
- 2Place the salmon fillets in a shallow dish and pour half of the marinade over them, turning to coat evenly. Cover and refrigerate for 20 to 30 minutes. Reserve the remaining marinade in a covered container in the refrigerator.
- 3Preheat the oven to 200°C (400°F). Line a baking sheet with aluminum foil and lightly grease the foil with a neutral oil or nonstick spray.
