Nam Bai Toey (Pandan Water)
Traditional Thai pandan leaf infusion, lightly sweetened and served chilled as a fragrant drink or used to perfume desserts.

Ingredients
- 60g (2.1 oz) fresh pandan leaves, rinsed and trimmed
- 1000ml (4 1/4 cups) cold water
- 100g (3.5 oz) granulated sugar
Method
- 1Rinse 60g (2.1 oz) pandan leaves under cold running water, trim any brown tips, then fold and tie each leaf into a loose knot to lightly bruise.
- 2Add the pandan knots to a medium saucepan with 1000ml (4 1/4 cups) cold water.
- 3Bring to a gentle simmer over medium heat, then reduce to low and simmer gently for 10 minutes (0.17 hours), avoiding a vigorous boil to prevent bitterness.
- 4Turn off the heat, add 100g (3.5 oz) sugar, and stir until fully dissolved.
