Moroccan Apricot Chicken Tagine

Ingredients

  • 1.5 kg chicken thighs, bone-in and skin-on
  • 2 tbsp olive oil (30ml)
  • 1 large onion, chopped (150g)
  • 3 cloves garlic, minced (9g)

Method

  1. 1Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.
  2. 2Season chicken thighs with salt and pepper. Brown them in the pot for 5–7 minutes per side until golden. Remove and set aside.
  3. 3In the same pot, add chopped onion and cook for 5 minutes until translucent.
  4. 4Add minced garlic, ground ginger, cinnamon, turmeric, and smoked paprika. Stir and cook for 1 minute until fragrant.
