Moroccan Apricot Chicken Tagine
A classic Moroccan chicken tagine that blends aromatic spices, tender chicken, and sweet dried apricots. This slow-cooked stew reflects Morocco’s rich culinary traditions, pairing savory, sweet, and tangy flavors. Traditionally prepared in a tagine but easily adapted to a Dutch oven.

Ingredients
- 1.5 kg chicken thighs, bone-in and skin-on
- 2 tbsp olive oil (30ml)
- 1 large onion, chopped (150g)
- 3 cloves garlic, minced (9g)

Method
- 1Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.
- 2Season chicken thighs with salt and pepper. Brown them in the pot for 5–7 minutes per side until golden. Remove and set aside.
- 3In the same pot, add chopped onion and cook for 5 minutes until translucent.
- 4Add minced garlic, ground ginger, cinnamon, turmeric, and smoked paprika. Stir and cook for 1 minute until fragrant.
