Pho Bo: Beef Noodle Soup

Ingredients
- 200g dried pho rice noodles
- 300g beef sirloin, thinly sliced
- 1.5L beef stock
- 1 medium onion, halved

Method
- 1Char the onion and ginger under a broiler or open flame until the surfaces are slightly blackened, about 5 minutes.
- 2In a large pot, bring beef stock to a boil. Add star anise, cloves, cinnamon, charred onion, and ginger. Reduce heat and simmer uncovered for 30 minutes.
- 3Skim off any foam. Remove and discard the spices, onion, and ginger after simmering to clarify the broth.
- 4Season the broth with fish sauce, soy sauce, and salt to taste. Keep the broth hot.
