Balinese Tuna Tataki & Sambal Matah

Ingredients
- 400g fresh tuna steak, sashimi grade
- 2 shallots, finely sliced (40g)
- 2 bird’s eye chilies, thinly sliced (10g)
- 1 lemongrass stalk, white part only, finely sliced (20g)

Method
- 1Pat the tuna steak dry and slice into 1 cm thick steaks. Season both sides lightly with sea salt.
- 2Heat a skillet or frying pan over high heat and add 1 tablespoon of coconut oil.
- 3Sear each tuna steak for 30 seconds to 1 minute per side until a light crust forms, leaving the interior rare.
- 4Remove the tuna from the pan and let rest for 2 minutes, then slice thinly with a sharp knife.
