Balinese Betutu Duck
Bebek Betutu is a ceremonial Balinese dish in which whole duck is marinated in bumbu spice paste, wrapped in banana leaves, and slow-cooked for exceptional tenderness and aromatic depth. Traditionally served at important events, it represents the rich cultural heritage of Bali.

Ingredients
- 1 whole duck (about 2.5 kg), cleaned
- 50g turmeric powder
- 10 kaffir lime leaves, torn
- 4 lemongrass stalks, bruised

Method
- 1Prepare the spice paste: In a blender, combine sliced shallots, garlic, chilies, grated ginger, grated turmeric root, ground coriander seeds, turmeric powder, and salt. Add a little water and blend into a smooth paste.
- 2Rub the paste thoroughly over and inside the duck. Marinate for at least 4 hours, preferably overnight in the refrigerator.
- 3Briefly blanch banana leaves over an open flame or in hot water until pliable.
- 4Lay out banana leaves and place the marinated duck on top. Stuff some torn kaffir lime leaves and bruised lemongrass stalks inside the duck’s cavity.
