Manado Spiced Fish in Banana Leaf
A vibrant Manadonese preparation of fish fillets marinated in an aromatic spice paste, wrapped in banana leaves and steamed or grilled for tender, fragrant results. Flavors are tangy, spicy, and herbaceous, best served with steamed rice and sambal.

Ingredients
- 600g (1 lb 5 oz) fish fillets (grouper or snapper), about 4 fillets
- 4 banana leaves, large, cleaned and softened, about 200g (7 oz) total
- 200g (7 oz) green bananas or sweet plantains, peeled and sliced (about 2 medium)
- 40g (1.4 oz) shallots, roughly 4 small shallots

Method
- 1Prepare the spice marinade: in a blender or mortar and pestle, combine shallots, garlic, red chilies, turmeric powder, coriander powder, black pepper, salt, and 30ml (2 tbsp) water. Blend or pound to a smooth paste.
- 2Pat fish fillets dry with paper towels and, if thick, score the skin side lightly so the marinade penetrates. Transfer fillets to a bowl and rub the spice paste evenly over all sides.
- 3Marinate the fish for at least 20 minutes at room temperature or up to 2 hours in the refrigerator. If refrigerated, bring fillets back to room temperature for 15 minutes before cooking.
- 4Soften banana leaves by briefly passing them over an open flame or dipping them in hot water until pliable. Dry and lay a leaf flat, place a marinated fillet in the center, and top with several slices of green banana or plantain.
