Honey Harissa Roasted Chicken Thighs

Ingredients
- 8 bone-in, skin-on chicken thighs, about 1.36 kg (3 lb)
- 45 ml (3 tbsp) harissa paste
- 60 ml (1/4 cup) honey
- 30 ml (2 tbsp) olive oil

Method
- 1Pat the chicken thighs dry with paper towels, then season both sides generously with salt and black pepper.
- 2In a small bowl, whisk together the harissa paste, honey, olive oil, lemon juice, minced garlic, ground cumin, and ground coriander until smooth.
- 3Reserve 45 ml (3 tbsp) of the marinade in a separate small bowl before contacting raw chicken. Set the reserved portion aside for basting.
- 4Place the chicken thighs in a large zip-top bag or a shallow dish, pour the remaining marinade over them, turn to coat evenly, then seal or cover and refrigerate to marinate for at least 30 minutes, up to 4 hours.
