Teh Talua (West Sumatran Egg Tea)

Ingredients

  • 480ml (2 cups) water
  • 8g (0.28 oz) loose black tea leaves
  • 2 large egg yolks, 36g (1.3 oz)
  • 30g (1.1 oz) granulated sugar

Method

  1. 1Warm 2 cups: fill each cup with 240ml (1 cup) freshly boiled water, rest 30 seconds (30 seconds), then discard.
  2. 2Brew the tea: bring 480ml (2 cups) water to a boil, remove from heat, add 8g (0.28 oz) black tea leaves, steep 3 to 4 minutes (3 to 4 minutes), then strain into a heatproof jug.
  3. 3Whisk the yolks: in a heatproof bowl, whisk 2 egg yolks, 36g (1.3 oz), with 30g (1.1 oz) sugar until paler, slightly thickened, and foamy, 1 to 2 minutes (1 to 2 minutes).
