Air Jagung

Refreshing Indonesian sweet corn drink made by blending fresh corn with water and sugar; lightly sweet, slightly vegetal, naturally corn-forward. Served chilled over ice as a simple everyday beverage with a clean, sweet-corn flavor.

Ingredients

  • 400g (14.1 oz / 3 cups) fresh sweet corn kernels (from about 3 medium ears)
  • 800ml (27.0 fl oz / 3 1/3 cups) cold water, divided (use 600ml then 200ml as needed)
  • 50g (1.8 oz / 1/4 cup) granulated sugar, adjust to taste

Method

  1. 1Wash hands and rinse the corn ears thoroughly. Trim the ends and remove husks and silk from each ear.
  2. 2Stand an ear on its end on a cutting board and carefully cut kernels off the cob with a sharp knife. Repeat with remaining ears until you have about 400g (14.1 oz / 3 cups) of kernels.
  3. 3Place 400g (14.1 oz / 3 cups) corn kernels and 600ml (20.3 fl oz / 2 1/2 cups) of the cold water into a blender. Secure the lid and blend on high until very smooth, about 30 to 45 seconds.
  4. 4Pour the blended corn through a fine-mesh sieve or cheesecloth set over a large bowl or pitcher. Use the back of a spoon or a spatula to press and extract as much liquid as possible. Discard or reserve the remaining pulp for another use (see tips).
