Es Blewah (Indonesian Iced Melon)

Ingredients

  • 500g (1 lb 2 oz) blewah (cantaloupe), peeled, seeded, and shredded into 3mm (1/8 inch) strips
  • 20g (2 tbsp) basil seeds (selasih)
  • 120ml (1/2 cup) cold water (for soaking basil seeds)
  • 100g (3.5 oz) palm sugar (gula aren), chopped

Method

  1. 1Soak selasih: Put 20g (2 tbsp) basil seeds in a bowl with 120ml (1/2 cup) cold water. Stir, then soak for 10 minutes until gelatinous. Drain through a fine-mesh strainer and set aside.
  2. 2Make palm-sugar syrup: In a small saucepan, combine 100g (3.5 oz) chopped palm sugar with 120ml (1/2 cup) water. Warm over medium heat, stirring until dissolved, then simmer gently for 3 minutes. Cool for 10 minutes.
  3. 3Prepare the blewah: Shred the blewah into thin strips (about 3mm (1/8 inch) thick) to yield 500g (1 lb 2 oz).
  4. 4Mix the coconut base: In a pitcher, whisk 240ml (1 cup) coconut milk with 60ml (1/4 cup) sweetened condensed milk until smooth.
