Traditional Betawi nonalcoholic spiced ginger drink fragrant with pandan and lemongrass; sweet, warm, slightly peppery, and naturally foamy when poured back and forth.

Ingredients
- 80g (2.8 oz) fresh ginger, peeled and thinly sliced
- 2 stalks lemongrass, bruised and halved, about 30g (1.1 oz) total
- 3 pandan leaves, tied into a knot, about 10g (0.35 oz) total

Method
- 1Prepare aromatics: peel and thinly slice 80g (2.8 oz) ginger. Bruise 2 stalks lemongrass (about 30g (1.1 oz) total) with the back of a knife, then cut in half. Tie 3 pandan leaves (about 10g (0.35 oz) total) into a knot.
- 2Toast for fragrance: in a medium saucepan, add the sliced ginger, lemongrass, pandan, 1 cinnamon stick (about 5cm (2 in) and about 3g (0.1 oz)), and 4 cloves (about 1g (0.04 oz)). Stir over medium heat for 2-3 minutes until aromatic (do not burn).
- 3Simmer: add 1000ml (4 1/4 cups) water, 100g (3.5 oz) grated palm sugar, 1/4 tsp (1.0g) ground black pepper, and 1/4 tsp (1.5g) fine salt. Bring to a gentle boil, stirring until the sugar dissolves.
