Kopi Tarik

Classic Malaysian pulled coffee: strong sock-brewed coffee blended with sweetened condensed milk, then “pulled” for a creamy foam and a slightly cooler drinking temperature.

Ingredients

  • 30g (1.1 oz) dark-roast ground coffee (preferably robusta)
  • 480ml (2 cups) water, just off the boil at 96-100°C (205-212°F)
  • 60ml (1/4 cup) sweetened condensed milk

Method

  1. 1Heat 480ml (2 cups) water to 96-100°C (205-212°F) and keep hot.
  2. 2Set a kopi sock (coffee sock) over a heatproof jug. Add 30g (1.1 oz) ground coffee into the sock.
  3. 3Pour all 480ml (2 cups) hot water through the grounds in the sock into the jug. Stir the grounds in the sock with a spoon, then steep 4 minutes for a strong brew.
  4. 4Lift the sock and let it drain fully into the jug.
