Classic Kulfi
Kulfi is a traditional frozen dairy dessert from the Indian subcontinent, known for its rich and dense flavor profile. Unlike Western ice creams, kulfi is not churned and is often flavored with cardamom, saffron, and pistachios. It’s a classic street dessert especially popular during Indian summers.

Ingredients
- 1 liter whole milk (4¼ cups)
- 100 g sweetened condensed milk (3.5 oz or 1/3 cup)
- 80 g sugar (2.8 oz or 6½ tbsp)
- 100 ml heavy cream (3.4 fl oz or 1/3 cup)

Method
- 1Pour the whole milk into a heavy-bottomed saucepan and bring to a boil over medium heat.
- 2Reduce heat and simmer, stirring frequently and scraping the sides, until milk is reduced to half (about 35–40 minutes).
- 3Add the sweetened condensed milk and sugar, mix well, and simmer for another 10 minutes.
- 4Add heavy cream, ground cardamom, saffron strands (if using), and half of the chopped pistachios. Stir to combine.
