Jamu Temulawak
Traditional Indonesian jamu made by simmering temulawak (Curcuma xanthorrhiza) with palm sugar for an earthy, gently bitter, warming tonic.

Ingredients
- 200g (7 oz) fresh temulawak (Curcuma xanthorrhiza) rhizome, scrubbed, peeled, thinly sliced
- 1000ml (34 fl oz, 4 1/4 cups) water
- 60g (2 1/8 oz, about 1/4 cup packed) palm sugar (gula jawa), finely chopped or grated
- 1.5g (0.05 oz, 1/4 tsp) fine salt
Method
- 1Wear kitchen gloves if desired; temulawak can stain hands and porous surfaces.
- 2Scrub 200g (7 oz) temulawak thoroughly under running water, then peel.
- 3Thinly slice the temulawak to 2mm to 3mm (1/16 in) thickness.
- 4Add the sliced temulawak and 1000ml (34 fl oz, 4 1/4 cups) water to a medium saucepan.
