Ingredients
- 240ml (1 cup) freshly squeezed lime juice, strained (from 8 to 10 limes, about 900g (2 lb))
- 100g (1/2 cup) granulated sugar
- 120ml (1/2 cup) hot water

Method
- 1Wash 8 to 10 limes (about 900g (2 lb)) well. Roll on the counter to loosen juice, then halve and squeeze until you have 240ml (1 cup) lime juice; strain to remove seeds and excess pulp.
- 2Make syrup: combine 100g (1/2 cup) sugar and 120ml (1/2 cup) hot water in a small saucepan over low heat. Stir until fully dissolved, about 2 minutes, then remove from heat and cool 3 minutes.
- 3In a 1.5L (50 fl oz) pitcher, combine the syrup, 240ml (1 cup) strained lime juice, 720ml (3 cups) cold water, and 1g (1/4 tsp) salt. Stir until fully mixed.
- 4Add 400g (14 oz) ice cubes to the pitcher and stir 10 seconds. Pour into glasses over ice to serve immediately.
