Pineapple Shrimp Fried Rice

Ingredients

  • 300g (1 1/2 cups) cooked jasmine rice, preferably day-old
  • 150g (1 cup) fresh pineapple, diced
  • 100g (3.5 oz) cooked shrimp, peeled and deveined
  • 2 cloves garlic, minced, approximately 6g (0.2 oz)

Method

  1. 1Prepare ingredients: dice the pineapple, slice the chili and green onions, chop the onion, and mince the garlic. Break apart any clumps in the day-old rice so grains are loose.
  2. 2Heat a wok or large skillet over medium-high heat until hot, then add the vegetable oil and swirl to coat the surface.
