Sữa Đậu Nành (Soy Milk)
Traditional Vietnamese homemade soy milk simmered gently for a clean, creamy flavor. Serve warm or chilled, lightly sweetened and lightly salted.

Ingredients
- 200g (7 oz) dried soybeans, rinsed
- 1000ml (4 1/4 cups) water, for soaking
- 1200ml (5 cups) water, for blending
- 25g (2 tbsp) granulated sugar

Method
- 1Rinse 200g (7 oz) dried soybeans under cold running water until the water runs clear; discard any debris or damaged beans.
- 2Place the rinsed soybeans in a bowl and cover with 1000ml (4 1/4 cups) water. Soak at room temperature for 8 to 12 hours (or overnight) until plump; do not exceed 16 hours. If ambient temperature is above 24°C (75°F), soak in the refrigerator.
- 3Drain and discard the 1000ml (4 1/4 cups) soaking water, then rinse the beans well. For a cleaner, silkier milk, rub the beans between your hands in water to loosen skins and skim off the floating skins, then drain.
- 4Blend the soaked beans with 1200ml (5 cups) fresh water on high speed until very smooth, about 1 to 2 minutes.
