Ingredients

  • 200g (7 oz) dried soybeans, rinsed
  • 1000ml (4 1/4 cups) water, for soaking
  • 1200ml (5 cups) water, for blending
  • 25g (2 tbsp) granulated sugar

Method

  1. 1Rinse 200g (7 oz) dried soybeans under cold running water until the water runs clear; discard any debris or damaged beans.
  2. 2Place the rinsed soybeans in a bowl and cover with 1000ml (4 1/4 cups) water. Soak at room temperature for 8 to 12 hours (or overnight) until plump; do not exceed 16 hours. If ambient temperature is above 24°C (75°F), soak in the refrigerator.
  3. 3Drain and discard the 1000ml (4 1/4 cups) soaking water, then rinse the beans well. For a cleaner, silkier milk, rub the beans between your hands in water to loosen skins and skim off the floating skins, then drain.
  4. 4Blend the soaked beans with 1200ml (5 cups) fresh water on high speed until very smooth, about 1 to 2 minutes.
