Jamu Beras Kencur

Ingredients

  • 100g (3.5 oz) uncooked white rice (beras), rinsed
  • 50g (1.8 oz) fresh kencur (Kaempferia galanga), peeled and roughly chopped
  • 30g (1.1 oz) fresh ginger, peeled and roughly chopped
  • 80g (2.8 oz) palm sugar (gula aren/gula jawa), chopped

Method

  1. 1Rinse 100g (3.5 oz) rice under cool running water until the water runs clear; drain well.
  2. 2Soak the rinsed rice in 250ml (1 cup) water for 2 hours; drain, reserving the soaking water.
  3. 3Blend the soaked rice, 50g (1.8 oz) kencur, and 30g (1.1 oz) ginger with 250ml (1 cup) reserved soaking water (or 250ml (1 cup) fresh water) until very smooth, about 1 to 2 minutes.
  4. 4Strain through a fine-mesh sieve lined with cheesecloth into a bowl, squeezing firmly to extract as much liquid as possible.
