Minangkabau-style Beef Rendang

Ingredients
- 500g beef chuck, cut into chunks
- 400ml coconut milk
- 2 shallots, finely chopped (40g)
- 4 cloves garlic, minced (12g)

Method
- 1In a dry skillet over medium heat, toast the spice mixture of coriander, cumin, fennel, cloves, cinnamon, and turmeric until fragrant (about 2-3 minutes). Grind to a fine powder using a mortar and pestle or spice grinder.
- 2In a large pot or wok, heat 3 tbsp of coconut oil over medium heat. Sauté finely chopped shallots, garlic, and ginger until fragrant and translucent (about 5 minutes).
- 3Add the ground spice powder to the sautéed aromatics and cook for another 2 minutes, stirring constantly.
- 4Pour in 400ml of coconut milk, then add 300g beef cut into chunks. Bring the mixture to a gentle simmer.
