Anatolian Lamb Stew

Ingredients

  • 600g (1 lb 5 oz) lamb shoulder, cut into 3cm (1.2 in) cubes
  • 30ml (2 tbsp) olive oil
  • 150g (5.3 oz, about 1 large) onion, chopped
  • 9g (3 cloves, 0.3 oz) garlic, minced

Method

  1. 1Prepare ingredients: trim excess fat from the lamb and cut into 3cm (1.2 in) cubes. Chop the onion, tomatoes, bell pepper, carrots, and zucchini. Mince the garlic and chop the parsley.
  2. 2Heat a large heavy-bottomed pot or Dutch oven over medium heat and add 30ml (2 tbsp) olive oil.
  3. 3Add 150g (5.3 oz) chopped onion and sauté for about 5 minutes, stirring, until translucent and softened.
