Ingredients
- 600g (1 lb 5 oz) lamb shoulder, cut into 3cm (1.2 in) cubes
- 30ml (2 tbsp) olive oil
- 150g (5.3 oz, about 1 large) onion, chopped
- 9g (3 cloves, 0.3 oz) garlic, minced

Method
- 1Prepare ingredients: trim excess fat from the lamb and cut into 3cm (1.2 in) cubes. Chop the onion, tomatoes, bell pepper, carrots, and zucchini. Mince the garlic and chop the parsley.
- 2Heat a large heavy-bottomed pot or Dutch oven over medium heat and add 30ml (2 tbsp) olive oil.
- 3Add 150g (5.3 oz) chopped onion and sauté for about 5 minutes, stirring, until translucent and softened.
- 4Stir in 9g (3 cloves) minced garlic and cook for 1 minute until fragrant.
