Nước Rau Má (Pennywort Juice)
A classic Vietnamese cooling herbal drink made from fresh rau má (pennywort), blended, strained, lightly sweetened, and served icy cold.

Ingredients
- 200g (7 oz) fresh rau má (pennywort) leaves, washed and trimmed
- 800ml (3 1/3 cups) cold water, divided
- 100g (1/2 cup) granulated sugar
- 300g (10 1/2 oz) ice cubes
Method
- 1Rinse 200g (7 oz) rau má thoroughly under running water, trim tough stems, and roughly chop (about 1 minute).
- 2Add the chopped rau má to a blender with 600ml (2 1/2 cups) cold water. Blend on high until fully pureed and bright green, 30 to 45 seconds.
- 3Strain the mixture through a fine-mesh sieve (or cheesecloth) into a bowl or pitcher. Press firmly to extract as much liquid as possible (about 2 to 3 minutes).
- 4Add 100g (1/2 cup) sugar to the strained juice and stir until fully dissolved, about 1 to 2 minutes.
