Oliang Yen (Thai Iced Coffee)

Classic Thai iced coffee brewed strong and sweet, poured over ice, then finished with sweetened condensed milk for a rich, creamy balance.

Oliang Yen (Thai Iced Coffee)

Ingredients

  • 30g (1.1 oz) coarsely ground very dark-roast Thai coffee (oliang-style blend if available)
  • 480ml (2 cups) water
  • 25g (2 tbsp) granulated sugar
  • 80ml (1/3 cup) sweetened condensed milk

Method

  1. 1Bring 480ml (2 cups) water to a full boil, 100°C (212°F), then let stand for 1 minute to cool slightly to about 96°C (205°F).
  2. 2Add 30g (1.1 oz) coarsely ground coffee to a Thai coffee sock (cloth filter) set over a heatproof jug.
  3. 3Pour the hot water evenly through the sock over the grounds, then gently stir once with a long spoon to fully saturate. Steep in the sock for 5 minutes (remove or lift the sock at 5 minutes to avoid harsh bitterness).
  4. 4While the coffee is hot, stir in 25g (2 tbsp) sugar until fully dissolved.
