Goya Tofu Pork Stir-Fry
A vibrant Okinawan classic, Goya Champuru features stir-fried bitter melon (goya), tofu, pork, and eggs. Renowned in Ryukyuan cuisine, this nutritious dish is often enjoyed in Japan's Okinawa islands, especially during the summer when goya is plentiful.

Ingredients
- 1 medium bitter melon (goya), about 200g (7 oz), sliced and seeded
- 200g (7 oz) firm tofu, drained and cubed
- 100g (3.5 oz) pork belly or pork loin, thinly sliced

Method
- 1Cut the bitter melon in half lengthwise. Use a spoon to scoop out the seeds, then slice the melon into thin crescents.
- 2Sprinkle the bitter melon slices with 3g (1/2 tsp) salt and let them sit for 10 minutes to reduce bitterness. Rinse well with water and pat dry with paper towels.
- 3Wrap the tofu in paper towels and gently press to remove excess water. Cut into 2 cm (3/4 in) cubes.
- 4Heat 7ml (1/2 tbsp) of vegetable oil in a frying pan over medium heat. Add tofu cubes and cook, turning occasionally, until golden on all sides (about 5 minutes). Remove tofu from pan and set aside.
